Cherry-red with an ochre rim. In the nose mildly spicy heart-cherry, elegant Nougat. Satiny and sweet on the palate with an extensive and together elegant structure, refreshing acidity, long finish accompanied by extract sweetness, excellent potential for ageing.
Vinification:
Harvest by hand, single berry selection on the sorting table (by hand), cool maceration, natural fermentation in big open wooden fermenter, pigeage, ageing in Pièces from Burgundy (12 months, 30% new oak), bottled unstrained
