Middledeep yellowgreen, in the nose elegant tenderly flavorsome, with a hint of green herbs. Rich fruit of pear, quince and apple. Long lasting, complex flavors of sweet mountain herbs, well integrated wood, needs time to develope, with good maturity potential.
Vinification:
Harvest by hand, single berry selection in the cellar, cool maceration, natural fermentation followed by malolactic fermentation (MLF), ageing in Pièces from Burgundy (18 months)
